Every once in awhile I like to find something good to share with our vegetarian friends, and these  Smørrebrød or Danish open faced sandwich vegetarian style ideas are perfect for a vegetarian meal.

Smørrebrød are usually made with fish, poultry or other meats but these vegetarian idea by Green Kitchen Stories are so delicious and healthy that I don’t think most folks would mind that they don’t have meat on them. Even meat eaters can use a break from meats once in a while especially with the prices of meats now. Made with a nice dark rye bread you can pile on your favorite toppings to create your favorite smørrebrød.

Along with the idea on toppings the Green Kitchen also shares recipes like pickled red onions,  creamy curried egg salad and red bell pepper and rosemary spread to really kick up the flavors on your smørrebrød. The ideas don’t stop at savory flavors either, there is also an upscale pb& j recipe using hazelnut butter and fresh strawberries drizzled with honey and sprinkled with bee pollen for extra nutrition.

The old saying you are what you eat makes these ideas even better. To be all the colors in these ideas doesn’t sound too bad. Everything looks so fresh and delicious I can wait to try some of these soon as I get to a bakery for some good rye bread.
