Southern Refrigerator Pickled Corn with Red Onions Recipe is very easy to make, a short, direct, and most importantly, delicious creation.
Need to make a sweet side for a good outdoor barbecue or picnic? This infusion of flavors with wonderfully pickled corn makes the mouth water and gives a kick compared to whatever else you may eat your meal with.
sliced medium red onion
fresh cilantro leaves with tender stems
fresh lime juice
coarsely ground black pepper
apple cider vinegar
First, take the corn, chilies, jalapeno, red onion, lime juice, cilantro, and black pepper and mix it up in a small bowl. Then, take a small pot, put in the vinegar, salt, and sugar, and add 3/4 cups of water. Boil it and then slowly pour over the corn mix in the bowl. You will definitely smell that vinegar brine that you have just made. Stir it a bit more, then pour slowly into the Mason jar and close it. Let it sit there and chill down for a bit. Once cool, you can use it and based on much of it is eaten, it should be good for up to a month.
Serve it with chicken, burgers, ribs, or a beef brisket. It is a great side to serve with for a warm day out with friends and family.
