Spinach Ricotta Roll Ups

This recipe of spinach ricotta roll ups is for an easy version of an Italian dish called Rotolo. I had never heard of it but I guess it is well known in Italy. To make it like they do you have to first create the pasta and then the process of making the dish starts. Here you make it using lasagna sheets. If you can find fresh sheets in the refrigerated section at your grocery you can use those. If however like me you don’t find the fresh you can use the dried noodles for lasagna. Just cook them first and cut each noodle in half so that when you roll them up you don’t have too much noodle.

Delicious Spinach Ricotta Roll Ups

Made with a homemade sauce and melted cheese on top, serve with salad and some garlic bread and you will have a winner that everyone will like. The possibilities for fillings are endless. You could use squash and  basil, mushroom and olive or even a meat based sauce. This recipe comes from Recipe Tin Eats and it has definitely made it into my recipe box.
