A recipe for a super dark chocolate cake. This cake is so dark it almost looks black. Super moist and full of flavor. It is made with Dutch processed cocoa. I have baked many cakes in my lifetime and made fudge and other sorts of things with cocoa, but I always just used Hershey’s cocoa.

Not in this cake. No So Humble Pie shares her recipe for this super moist, super dark cake. The darkness comes from the cocoa powder. I learned from this recipe and article that Dutch processed cocoa has been made more alkaline that natural cocoa. In the recipe she takes it even further to eliminate all acidity in the cocoa and so her cake comes out almost black. I need to try this cake real soon because it looks utterly delicious.
I need to order some cocoa though because all I have is Hershey’s. If you are like me and never knew about this Dutch process, I found a very informative piece from Joy The Baker that explains it really well. The recipe goes on to a filling of chocolate mousse and a ganache topping. The cake looks so good and I am sure any chocolate lover would love this cake.
While it looks gorgeous the way she made it I am pretty sure it would be good with any number of frosting’s for a simpler version. I think I will try it with a cream cheese frosting when I make it the first time. She calls the cake Midnight Sin Chocolate Cake and I think she is probably right because I can see my self sneaking into the kitchen at midnight because this cake would be calling my name.
