Super Easy Cheater Chile Relleno Bake

If you have had chile rellenos then you know how delicious they are and if you haven’t had them, you don’t know what you are missing. Making them can usually be a long process. You have to roast the peppers and then peel and de-seed them. Then you need to grate the cheese and stuff them and after all of that you coat them with an eggy mixture and fry them. Then some folks make a tomato sauce with tomatoes, onion, oregano, garlic and salt to taste and serve the chiles in a dish with the tomato sauce. I have never cared for the tomato sauce so I never made it but I did go through all the work to make the chiles.

Now that I have found this awesome super easy cheater recipe I will never go to all of that trouble and mess. With this recipe from Yummy Healthy Easy you can have this on the table in under an hour. This is a perfect dish for the family or if you are having more people make the recipe and half again and use a lasagna pan. It will feed as many as a pan of lasagna will. This recipe uses canned chiles so you can skip all the roasting and peeling. They are stuffed with pepper jack cheese which gives them great flavor. The only thing I changed on the recipe is instead of using cheddar cheese to top the dish I grated some more of the pepper jack to add even more flavor. This has become a favorite dish at my house. Everyone loves it. It tastes just like chile rellenos from a restaurant but it is super easy to make.
