I would never have thought to make cookies for breakfast, I always spent too much time trying to not let them have cookies. This recipe really is a good way to eat heathy cookies for breakfast or as a nice snack any time of day. Loaded with health ingredients like oats, peanut butter,bananas, sunflower seeds and cranberries and sweetened with honey instead of sugar the kids will get more nutrients from this mix than they would ever get out of cereal. The recipe makes a dozen but since you can freeze them after baking and cooling why not triple the recipe and freeze some. They would thaw pretty quickly and could be popped into a bag lunch frozen and they would be thawed by lunch time.So move over cereal and hello breakfast cookies.
