Vegetable Beef Soup Recipe – to Help Get Over Colds & Flu

Has someone in your household caught a cold or flu this winter ?  While they crawl into bed and get some rest,  you can whip a quick batch of this soup to  help them regain their strength.

Ingredients:

2 Tablespoons of Butter
2 Carrots, diced
2 Stalks of Celery, diced
1 Onion, diced
6 Cups of Beef Broth
2 Cups of Cabbage, chopped
1 Potato, chopped
1 Cup Sweet Corn
2 Tomatoes, diced
2 Tablespoon Fresh Herbs
Salt & Pepper

 

Melt the butter in a large pan. Add the carrot, celery and onion; cook over medium heat, stirring often until onion is tender about 8 minutes.

Add the broth, herbs and remaining vegetables.

Cover partially and simmer until potatoes are tender about 16 minutes.

Salt and pepper to taste and serve.
