Vietnamese Pickles Carrots & Daikon Radish

At my house we usually have pickles on burgers and not much else but when I saw this recipe for pickled carrots and daikon radish my mouth said “give me some now” so I bought the stuff and made them. We loved them and still do. The sweetness of the veggies and the sour of the pickling just seem to go together perfectly and  they go well on the side,as a snack, in sandwiches and even on burgers.
