If you use Ro tel at your house you may like this tutorial on how to water bath can your own Ro tel at home. I use Ro tel in a lot of recipes. The blend of tomatoes, onions and chili add a great flavor to soups, stews, sauces and dips.

The down side of it is that buying the cans in the store is expensive. Canning our own would be very economical, especially is you garden and grow the tomatoes, onions and chili. I grow the tomatoes and chili but not onions. However onions are pretty reasonable so it is still pretty cheap to make my own Ro tel.  One of our favorite recipes where the flavor really makes the dish is a dip that i make. For the dip you put a can of chicken rice soup, a can of Ro tel and two pounds of Velveeta cheese into a saucepan and heat until the cheese is melted. Serve with tortilla or we love it poured over nachos in place of nacho cheese topping. If you use jars of spaghetti sauce, adding a jar of your homemade Ro tel will up the flavor and add just a hint of zing.  Ro tel is even good as a dip all by its self. It is so good in the winter when you can open a jar and just eat it with the tortilla chips, the flavor brings back all the taste of summer ripe tomatoes.
