This whole wheat pasta with a glorious rainbow of veggies and peanut sauce is such a great dish to make in the summer time. The veggies are all fresh and hopefully from your garden, at least some of them. The whole wheat pasta, a little better than white flour pasta and then the peanut sauce.
Totally delicious, so much color and flavor it is really satisfying and yet it doesn’t leave you feeling over full. I love everything about this dish, from the color to the variety of things in it. The only thing that I would do differently is I don’t eat edamame so I replace it with baby lima beans or peas. The peanut sauce is so good you may find yourself making it just as a topping for plain pasta. It has peanut butter, honey, soy sauce, fresh ginger, rice vinegar and garlic and is scrumptious.
