Learn how to butterfly a flank steak and then stuff and roll it for cooking on the grill. I had never seen this done before but I can’t wait till summer to try it. We usually cook flank or skirt steak on the grill during the summer months and then cook onion wedges and halved jalapenos in foil packets and serve the meat and cooked veggies with tortillas.
Flank steak has a great flavor and it is sort of a thin cut of meat so it cooks quickly. This recipe where Southern Boy Dishes has butterflied the steak and then stuffed it with sun dried tomatoes, spinach and cheese looks fantastically delicious and is going to be the first thing I make when the grill comes out of winter storage. If you like to grill beef in the summer you are going to want to bookmark this recipe so you can find it when its time to fire up your grill.
I think I will serve it with a nice salad and some Esquites. If you live where everything is covered with snow right now like I do you can probably find flank steak at much lower prices than you will find when the weather gets warm. If you like this flavorful cut of meat now is a good time to buy it and freeze it for the grill later. Just make sure you use your Foodsaver or at least double freezer bags to prevent freezer burn.
