Homemade Raw Cashew Lemon Drops Recipe

If you are in the mood for a light dessert that is made from raw ingredients and you like both lemon and cashews this is the one. Delicious lemons,cashews and dates go together to create a chewy lemony ball of yum.

   Healthful Pursuit shares this recipe and she says they are good if you keep them in the freezer to eat cold or at room temp as well. I like them from the freezer too. I always have to double and triple this recipe when I make them because they are just so good that everyone wants 2nds and 3rds and sneaky 4ths so they are all gone in a 24 hour period. I guess its okay since they are sort of healthy and I would rather they eat four of these than four store-bought cardboard cookies with no nutritional value in them.

  This is a good recipe and these make a welcome break during the holidays when there are mounds of sugar and butter laden goodies around.
