Now that things are growing again I am watching the lavender for flowering so I can make a batch of these lavender shortbread cookies. I made some last year and they were delicious. They are also very pretty with their sparkley lavender sugar (recipe for sugar here). The recipe also has lemon and mint in it. I left out the mint because I wanted the flavor and scent of the lavender to come through but you could put it in as you wish.
