I have heard the expression that some people eat with their eyes. While I know we eat with our mouths sometimes a dish truly is a feast for the eyes and this baked chicken Mediterranean style is high up on my list of food that gets eaten with both the eyes and the mouth. The way it looks is just gorgeous, all the color and heartiness and then the flavors of the chicken, artichokes and the creamy beans. Pure eating enjoyment.
Served with some crusty bread and you have a filling meal that is as much fun to eat as to look at. Baked all in one dish, it doesn’t get much easier. The Clever Carrot shares this recipe and I humbly thank them for it. Here is a recipe for Crusty bread that you mix and let stand overnight. It gets baked at 450 so bake it then turn the oven down to 400 and bake your chicken. Nice when the things you are baking can share the preheating and the oven heat.
