I have heard the expression that some people eat with their eyes. While I know we eat with our mouths sometimes a dish truly is a feast for the eyes and this baked chicken Mediterranean style is high up on my list of food that gets eaten with both the eyes and the mouth. The way it looks is just gorgeous, all the color and heartiness and then the flavors of the chicken, artichokes and the creamy beans. Pure eating enjoyment.

It gets baked at 450 so bake it then turn the oven down to 400 and bake your chicken. Nice when the things you are baking can share the preheating and the oven heat.
