If you love fajitas but don’t want to grill or cook out now that it is getting cool, you can enjoy homemade chicken fajitas right from your oven. I have made chicken fajitas in a big iron skillet before and they turn out pretty good but they are always that little bit of searing that grilling gives them and while it may not look like much that searing does give the dis a lot more flavor.
When I make fajitas I brown an ounce or two of Mexican choriso in an oiled skillet before I put the chicken it. It adds just a subtle hint of extra flavor to everything. This is a much easier way to make a lot of chicken fajitas at once since you can cook them all at the same time.
When I do make them in a skillet you need to brown a little chicken at a time or the juices boils it rather than brown it. These are really good fajitas but I did brown my choriso and add it to the oil before adding the oil to the dish. It may not seem like much choriso but you will be amazed at how much it enhances the dish.
