You can make these as red or pink as you wish by how much food coloring you add and the cream cheese shortbread makes them just melt in your mouth. I love finding new ways to use the rhubarb I have growing in my garden. I have some in the freezer for use later in the year and I have made some jam but the rhubarb is still going strong so I made some of these bars and I am hoping there will be enough rhubarb to make them one more time because they were fantastic.
