Spanakopita is a Greek dish that is a spinach pie made with spinach and usually feta cheese mixture that is baked in a 9 X 13 pan with a top and bottom crust of phyllo dough from which servings are cut, but sometimes the spinach mixture is rolled up into individual servings. Either way you make it they are delicious. This recipe uses both feta and cottage cheese and you can choose to make half the recipe and make the individual pies or the whole recipe in the 9 x 13 and have plenty for everyone or lots of leftovers which are great for lunches.

Alexandra Cooks shares this recipe and I have made these a few times and they are totally delicious. The flaky phyllo with the spinach, (its best with baby spinach) and the cheese all held together with eggs is so satisfying. This is a great vegetarian dish and another great meat less meal. We love this with a salad and I usually serve pickled beets with it as well. It is a really nice way to eat spinach and by adding other veggies on the side or in a salad you really get some good vegetables for your meal.
