Many people, myself included, love breakfast burritos, but don’t want to have to wake up extra early before work or school to grab one from a local fast food place or cafe. Making a breakfast burrito yourself saves you that extra time and energy, and allows you to feed more people, like kids, family, and roommates. Might as well kill a few birds with the same stone, right?
This recipe, using bell peppers, onions, bacon, salsa, and some egg whites, is delicious and colorful, making it a perfect breakfast and just what you need before a morning of hard work. It’s also a burrito, so if you roll it right you can eat it on the go while you’re driving to where you need to be, in case you’re running late. Hand-held food can be a life saver when you’re out of time and have somewhere to be.
Cooking in the morning is also a nice way to wake you up because if you do it right, you get food, giving you incentive to focus on the task at hand. You don’t even have to worry about the calories as much as a normal burrito because you’re not even using the egg yolks. Overall, a win.
