Quick Homemade Puff Pastry And A Breakfast Casserole Recipe

If you like to use puff pastry in a lot of recipes then you already know it is kind of pricey and usually making your own is like a two or three day process. Well here is a recipe for making homemade puff pastry in under a half hour. Dessert For Two shares how you can make and roll out the pastry to get all those lovely layers in 15 minutes, then wrap it and put it in the fridge for a while or overnight and be ready to go with it in the morning.

My favorite way to use puff pastry (well after desserts) is to make a breakfast casserole bake with it. I like to roll out a sheet big enough to cover the bottom of my 9 x 13 cake pan. Pre-heat oven to 400 degrees F.  Then spread a pound of cooked sausage all over the pastry, add a cup of chopped spinach or kale spread over the sausage. Then beat eggs ( I use about 9 for my family but you can use more or less.)  Just use how ever many you would scramble for the amount of people you will be serving. There are only three of us but I use 9 eggs and we will end up with around 6 servings to be eaten over a couple days, for dinner, lunch or breakfast, we like it most any meal. Once you have your eggs beaten ( take out a fourth cup to use for an egg wash later) and add a cup and a half of grated cheddar cheese to the remaining eggs and stir it. Then pour over the sausage and greens. Sprinkle with pepper I like fresh ground. I don’t add salt because the cheese seems to be enough saltiness for us.

Next roll out a second sheet of pastry to cover the top. Try to make sure the pastry meets the sides of the pan all the way around so the egg doesn’t seep up on top while baking. Now add a tablespoon of milk to the 1/4 cup egg you saved and stir.  Brush top of casserole with it and then sprinkle 2 tablespoons of Parmesan over that. Bake your casserole at 400 degrees °F  25 to 30 minutes, all ovens are different so bake until your top pastry is a beautiful golden color. Remove from the oven and let it stand for 10 to 15 minutes to come together before cutting.

Leftovers can be eaten cold or reheated in the oven or microwave. If you heat in the microwave do it by 40 seconds at a time and test to see if it is hot enough. If you put it in there for too long your puff pastry will get very hard so do it in short times and check between.  This is really yummy and very satisfying. You can replace the sausage with ham or bacon if you prefer.

Breakfast Casserole Bake

Makes approx. 6 servings.

Preheat oven to 400 degrees °F

This recipe for puff pastry or a package of frozen puff pastry, If you buy it you will need to let it thaw before you roll it out.

  • 1 pound cooked sausage

  • 9 large eggs

  • 1 cup chopped spinach or kale

  • 2 tsp. pepper or more if you like a lot

Egg Wash:

  • 1/4 cup beaten egg

  • 1 tablespoon milk

  • 2 tablespoons grated Parmesan cheese to sprinkle after the egg wash
