I do know they are in some areas though so if you are one of the lucky folks that can get them and if you like cherry pie you need to make this pie filling and bake a pie because you are lucky enough to be able to. Here pie filling is such a beautiful color which comes from her using tart cherry juice in the recipe instead of water.
She also uses tapioca flour instead of wheat flour or corn starch which lets the glossy color of the cherries shine through.
