For those who savor Tex-Mex foods for anytime of the day, this is a good recipe for the morning. Breakfast sandwiches and quesadillas are a popular to-go food to for a quick bite to eat besides the normal coffee, juice, and cereal. It can be made at home very easily, even if cooking is a hassle in general. For one delicious serving, get 2 sausages, 2 beaten eggs, salt & pepper, 2 sliced spring onions, 30 grams of shredded cheese, and 1 big, flour tortilla. Add some spice to the sausage, onions, and tortilla for a good kick.
First, heat up a frying pan and put on squeezed or diced sausage meat. Chop it into tiny pieces, move it around using a spatula, and fry for about 3 minutes. Next, pour the egg, a dash of salt & pepper, and sprinkle on the sliced onions, also tiny. Keep frying until the egg is totally scrambled and cooked; this is another 2 minutes to do. Then, slowly pour the contents on the tortilla from the middle and sprinkle it with cheese. Fold up the tortilla into triangles along the edges until completely closed. Put the quesadilla back on the hot pan, fold side down, for another few minutes until it’s crispy, and flip it over to do the same on that side.
In 10-15 minutes, a golden, plentiful, yummy breakfast quesadilla has been made. Enjoy!
It has the added bonus of being hand held so when you are running out the door, take your breakfast with you.
