When cooler weather comes I think the only things I really like about it are better sleeping all cuddled up in blankets and soups, I love soup. Even better if they cook themselves. Like this homemade crock pot white chicken chili. It is so easy to make because you just toss everything into the crock pot and walk away.

Come back in a few hours and its ready to eat. Plus it is delicious. You can make this spicy, the way Baked By Rachel shares the recipe or you can leave the jalapeno out and make it not spicy or you can double the jalapeno and make it the way we do, it bites back, but it hurts so good.  I have made this soup quite a few times since I found it on Rachel’s blog and it is really good they way the recipe reads but I do switch it up sometimes.

As I said we like it super spicy but I also like to use cannellini beans instead of great northern beans sometimes and when I have cilantro in the house I will usually throw in some chopped cilantro. I also always double the recipe because we all like soup and will eat it for lunch the next day or two.
