If you love shortbread cookies you will love this recipe for them. I have made these many times since I first stumbled across the recipe and they are so delicious you will make them over and over again as well. Lmld shared the recipe a couple of years ago and she makes them with chocolate chips and they are superb with chocolate chips. They are also delicious with no chips but then they are really good with cherry chips and chopped walnuts and they are good with butterscotch chips.
I am not sure there is a flavor of chips that wouldn’t be good in these shortbread cookies because the cookie is so good it seems like it just goes well with any chips or nuts you might like to add to them. I found peppermint chips at christmas and added them and mini chocolate chips and they are the best chocolate peppermint shortbread cookie I have ever had. So choose your favorite flavor of chips and give this cookie recipe a try. For the folks that like shortbread cookies this is definitely a keeper. The recipe only makes about a dozen cookies so if cookies go at your house like they do at mine you may want to triple the recipe.
