And pickles are only good for so many things. Which is why, if you feel like pickling a vegetable, but you’re tired of cucumbers, this recipe offers a great alternative. And, it comes along right on time, since as summer comes to a close and fall starts, you’ll want to put away as many veggies as possible.

Pickling green beans isn’t anything new. However, this recipe definitely gives a little spin on it. This recipe describes a way of making pickled green beans that have enough spice that they never get old. In fact, the author talks about eating them straight out of the jar, because they’re so delicious. These pickled green beans go perfectly on a veggie plater or in a Bloody Mary. No matter what you decide to use these for, you will not be disappointed.

For this recipe, you will need the following ingredients:

– Green Beans
– White Vinegar
– Distilled Water
– White Sugar
– Canning Salt
– Bay Leaves
– Garlic Cloves
– Red Bell Peppers
– Crushed Red Pepper (Or a red chili pepper)
– Mustard Seed
– Dill Seed
– Coriander Seed

For this recipe, you’ll need to do a water bath. However, if you aren’t making a huge batch or if you don’t want to do a water bath, you can keep them in the refrigerator for a week after cooling.
