This recipe is for a gorgeous honey cloud pancake. It is made in a small skillet and perfect for one or you can double the recipe and make it in a bigger skillet. The neat thing about this recipe is that egg whites are whipped into stiff peaks and then folded into the pancake batter, giving it a cloud like lift. The pancake is poured into a skillet on the stove top just till the edges set then the fruit is added and it finishes baking in the oven allowing it to poof up.
