I like shrimp cocktail but there is something about Mexican shrimp cocktail with the cilantro that just says summer to me.
Mexican Shrimp Cocktail:
1 lb shelled and cooked shrimp
1 large chopped tomato
½ medium onion (chopped) or 2 green onions (chopped)
1/2 cup cilantro slightly chopped
½ jalapeno (diced with seeds or without for less hot)
2 avocado (chopped)
1 48 ounce (V8) vegetable juice
1/4 cup lime juice
Mix all in glass bowl and chill. Usually served in a sundae glass with saltines.
Makes 4 servings
