Upside Down Pineapple Pancakes

Upside Down Pineapple Pancakes

Usually when making pancakes I am still flipping cakes in the skillet while everyone else has eaten and gone so I end up eating alone when I am done cooking.  With this recipe you can fry some bacon or sausage while the pancakes bake and be ready to eat with your family when they are done. You can use maple syrup on your pancakes but if you really love the flavor you can also make some pineapple syrup to pour on them. To make the pineapple syrup you will need  3/4 cup of pineapple juice. If your cans of pineapple rings are packed in juice you can use the juice from them, you will need 2 cans since a can usually has 10 slices in it. Also 3/4 cup of water and 1 and 1/2 cup sugar.

Bring to boil while stirring, stir till sugar dissolves, then keep boiling without stirring for 2 1/2 minutes. If only adults will be eating you can add a fourth of a cup of rum after removing from stove.  Pour into a bottle or gravy boat for pouring. You can keep any left over syrup in the fridge for  a couple of months. Add it to tea or drinks as you wish.  This recipe for upside down pineapple pancakes is from Tip Buzz.
