Eggs For Dinner 25 Ways

Fantastic round-up of dinner recipes using eggs. With meat prices going up every day I am trying hard to find ideas for dinners that don’t have meat in them. I remember when I was growing up we didn’t eat meat every day. Some weeks we only had beef on Sunday. I think a lot of us have become accustomed to eating meat every evening. We sometimes have an omelet or egg salad sandwiches for dinner. We also have pinto beans with cornbread once a week.

Now that I have found this round-up I can rise above the omelet and maybe even serve eggs for dinner twice per week. This would help on saving money at the grocery store because eggs are still reasonable. If you would like to have eggs and meat you should try the burritos I make.

Eggs For Dinner 25 Ways

You start by browning a package of Mexican chorizo with a tablespoon of diced onion in a tablespoon of cooking oil, and once it is browned add a cup and a half or a can (drained and rinsed) of black beans. Once the beans are hot stir in 6 to 8 whisked eggs, reduce heat and let the eggs cook stirring every couple of minutes so they don’t stick and burn. Once the egg is cooked, turn off heat.

Then heat flour tortillas over the burner flame flipping quickly to prevent burning or heat them in the microwave. Then roll some of your egg mixture up in each tortilla to make burritos.
