Wow, does this sounds totally scrumptious or what. OMG Chocolate Desserts shares her recipe for the raspberry cheesecake truffles and they look amazing. I can not wait to try these. I do believe I will make one change though. Since these will need to kept in the fridge until you are ready to serve and eat them, I think I will try using coconut oil magic shell for the chocolate coating. I think it will coat the truffles and I really like the coconut oil mix for the way it gets hard when cold and softer the warmer it gets.
I think it will work well and if not I can always make it with the baking chocolate next time. I just think this is the perfect frozen morsel to cover with the magic shell. I could also make it with white chocolate chips instead of milk chocolate and have both on a tray when serving. I love raspberries with both types of chocolate and can’t wait to make these raspberry truffles.
