Want to make a snack that is perfect for the summer and comes a spicy kick? Here’s a creative snack with these zucchini pickled treats that are sweet and spicy. They are homemade and serve as well like a regular pickle but in a juice that makes it stand out. Pick up the following ingredients: ½ cup water,2 ½ teaspoons of kosher salt, 1 medium zucchini, sliced ?-inch thick, 1 small yellow onion, sliced ?-inch thick, ice cubes, 2 cups of apple cider vinegar, 1 cup of granulated sugar, 1½ teaspoons each of ground mustard and mustard seed, ¾ teaspoon of turmeric, and ½ teaspoon of crushed red pepper.
Ingredients:
water
kosher salt
zucchini
yellow onion
apple cider vinegar
granulated sugar
ground mustard
mustard seed
turmeric
crushed red pepper flakes (optional – adds some heat!)
First, in a small bowl, stir the water and salt until it dissolves. Then, put the sliced zucchini and onion in a large freezer bag and add the water/salt mix. Pour a few ice cubes and some more cold water to cover the zucchini and onions. Stir and seal the bag; let it sit for an hour. Next, mix the vinegar, sugar, mustards, turmeric, and red pepper flakes in a saucepan over a medium heat. Let it simmer for three minutes and stir to let the sugar dissolve, and then remove the pan off the stove. Then, get the freezer bag and drain the liquid out before pouring it in a large jar with the pan mix on top of it. Close it tightly and refrigerate for a day before serving. The pickles can be left in the fridge up to 2 months.
