Soon the cucumbers will be growing in the garden and we can make these stuffed cucumber roll ups. They look so tasty and fresh. I miss the vegetables that actually taste the way they are supposed to because I picked it when it was totally ripe instead of two weeks early for shipping purposes. I do buy some tomatoes in the winter months but they never really taste like much of anything. Most definitely not like a ripe tomato just gushing with juice when I pick it in the back yard. Anyway back to this recipe. The cucumber is stuffed with feta cheese, olives and sun dried tomato and would make a great lunch if you were eating light or a great side to a nice sandwich if you had more of an appetite. I think they would be good with a cream cheese and bacon filling too. What ever filling they look very pretty on the plate and it will be a new way to enjoy the cucumbers when they come.
This recipe is from Good Life Eats who actually shared the recipe as a holiday entertaining recipe and it is pretty enough for that but I am wanting more for a summer use of cucumbers. Fortunately we can all have it when we want it as long as there are cucumbers in the store.
