Ingredients:

6 medium Potatoes (2 lbs.)
1/4 cup Butter
1/3 cup chopped onion
Two tablespoons flour
2 teaspoons salt
1/2 teaspoon dried leaf thyme (optional)
3 cups milk

Directions:

1, Peel potatoes, cut into 1/8 inch slices; place in greased 2-quart casserole or baking dish.
2. In a medium saucepan, melt butter, add onion; cook until tender. Blend in flour, salt, and thyme. Remove from heat; stir in milk. Return to heat and cook, stirring constantly, until mixture thickens slightly and comes to a boil.
3. Pour over potatoes in casserole. Cover and bake in preheated 350-degree oven 30 minutes; uncover and bake about one hour longer, or until potatoes are tender.
4. For potatoes au gratin, add about three-fourths cup shredded cheese to the cream sauce and stir until melted.
Yields 6-8 servings.
