I have a lot of recipes to use for my zucchini but this is my new favorite. Zucchini cakes loaded with blueberries and then topped with lemonbuttercream, you won’t believe how delicious this cake is untill you try it yourself. It is a great way to use some of that zucchini and blueberries are in the stores now, unless you are a very smart person and grow your own, which I should do because they are so good for you and would be so much cheaper than buying in the store. But then to top off all that zucchini and blueberry goodness there is the lemonbuttercream.
I could almost be happy with just the bowl of the lemonbuttercream ( I love lemon anything).
